Simple Red Pepper Sandwiches with Boursin

Everyone I know is a bit out of sorts today, and this morning's snowfall did not help. We are tired of cold and gray and wind and wet. It is hard to believe that a year ago we were just a few days away from 62-degree weather.

Knowing I had another serving of last night's soup to eat cheered me today. But tonight, I wanted more, a sandwich perhaps.

What to eat? Leaving my husband on his own, I toasted buttered whole-grain bread while I roasted a small red pepper (my love for roasted red peppers has been well documented here). When the toast was done, I smeared it with Boursin cheese and topped it with my deep red peppers. Awfully tasty for a thrown-together meal. I garnished it with some sweet pickles made by my friend Denise.

My soup was even better the second time around, but I think it needs more salt.

Tell me, if you are coping with a protracted and miserable winter, what are you doing to cheer yourself? I have been keeping potted tulips on my desk at work and wearing summery colognes.

From a fellow griled red pepper fan -- I may have told you this (don't have time to check) but we made, rather I made, a big tartiflette for Easter lunch. That cheered us all up through a snowy Easter weekend.

Now it is just rainy and dreary, which is worse, so I'll need to look for some other peppy foods.

We have had rain lately, too, Betty, and there are few things I can do during the day to make my office (a corner office with three windows) feel cozy. My iPod in its dock, a desktop task lamp and a cup of tea really help stave off the gloom.

There is always plenty of food around, too, thanks to our lunch meetings. That helps!

That sandwich looks fantastic Mimi! I have a jar of roasted red peppers in the fridge, so that may very well be lunch today.

I'm fighting off the winter blah's by planning my garden and ordering seeds. Next week I'll probably by starting some tomato plants, so that'll help.

We're pretty much finished with snow cover for this winter (though there is a prediction of a bit to come on Friday -- a last gasp of winter?), so whenever the ground is bare, I go out and make diagrams of what I want to plant this year. And I've been cooking lots of super-spicy food, to chase the winter blues away!

Erika, starting plants is a great idea. I've never had much luck doing that, because I forget to care for them.

Ooh, Lydia, you should see our 7-8 foot snow banks. Underneath, the ground is waiting for me to do the same. Spicy food is a must!
