Kalyn's Chicken and Barley Soup

What began as an ice storm tinkling against roofs and windows early this morning turned into a full fledged blizzard by noon. By suppertime, a civil defense alert was issued warning us to stay off the streets.

As if. We can barely get our back door open.

It is soup making weather here in Wisconsin. I made Kalyn's Chicken and Barley Soup, because I had all the ingredients and it helps me live up to my goal of eating good carbs and more grains this year. I had a small amount of stewed tomatoes on hand and in those went, giving the soup a tangier taste.

I paired it with pita chips, cheese and cole slaw, because that's what we had on hand.

Tomorrow, everything will be delayed at least two hours while we dig out from under the last onslaught. This is getting old!

I made some veal chops marinated in olive oil and honey vinegar, with a little tomato paste. The recipe was vaguely inspired by The Silver Spoon cookbook, but as usual I added a few personal touches. I served it with a sauté of some frozen vegetables I needed to get rid of -- some fava beans, green beans and onions (I always have frozen onions on hand -- one of France's great frozen food inventions!)All the vegetables were sautéed in garlic - pretty good, actually.

I didn't make a thing. I went to a friend's house for dinner, and oh, what a treat! He cooked clams with sake, garlic, onions and cilantro, made his own hummus with lots of lemon and some mint (!), and marinated shrimp and cooked them on the barbecue. And then (as if we weren't bursting by then), he finished it off with a tart made of berries and goat cheese, topped with a coconut, almond, granola crumble. I have so much to be grateful for!

I hope nature is kind to you, allowing you to dig out without the bite of the wind, or more snow!

Betty, isn't it a great feeling to use up leftovers? I love the combinations of frozen vegetables you can buy at French grocery stores.

Oh, my, Toni, how wonderful that sounds! We got 11 inches of snow here. The banks are huge.
I've been cooking lots of soup (one with butternut squash, parsnips and carrots; another with turkey, spinach and mushrooms), stew, and old-fashioned spaghetti sauce. It's that kind of weather here, too.

I hope you liked the soup. Utah is also having a ton of snow, and I'm hating it! But we haven't had to stay off the streets yet, although last week we had a storm in a town south of Salt Lake where a school had to keep all the students at school overnight because it was not safe to drive.

(I want to go to Toni's friends house for dinner!)

Ooh, those soups sound great, Lydia. What in the world is happening with all this snow?

I did like it, Kalyn, and will try it tonight with an egg salad sandwich (whole grain bread, of course).

Inspired by the movie "Juno," we had "breakfast for dinner": pancakes, eggs, sausage, bacon. Light stuff...perfect for a cold night.

Yes...the weather. I have fall lawn clean-up to finish. My yard has been wet or under snow since November.

Chris, I love that sort of supper. It's been a long time for me - pancaks are a once-in-a-while thing.

The bank outside my office window is so high, I can only see the tops of buildings and no traffic.

Hi Mimi, I useg a Nigella recipe and marinated a chicken in buttermilk Saturdayu and roasted it on Sunday with some roasted veggies and garlic mashed potatoes. Saturday I dug some leftover Turkey day turkey and made soup. I'm sorry it's been so yucky weatherwise there. It snowed yesterday and today it was cold and windy but the rest of the week is supposed to be 50's. I love it. Almost springtime in the Rockies.

I had the same feeling Sunday in Chicago. So I cooked one of my favorite winter comfort food: Lapin Chasseur (Rabbit cooked with mushrooms and bacon in a wine sauce). Unfortunately, it was unsatisfying, due to the blandness of the rabbit's meat itself.
If you have a minute, you can read my comments about the importance of ingredients when trying to cook "French" in America on my blog.
Keep warm... Mimi. And keep faith, one of these days Spring will be back. I hope... Meanwhile we have 3 degrees above this morning.
Tonight it is going to be chicken soup for us. But I will let my Wisconsin-born wife make it, she does this kind of dishes 10 times better that I could..

Wet burritos...with all the fixins'! Had all the kids over, so thought I would do something easy. NOT. By the time I made my homemade salsa, homemade guacamole, chopped the tomatoes and shredded the lettuce, made burrito "gravy" and a homemade chocolate pie, I could have made a traditional Thanksgiving dinner! Oh yeah... And made the bomb margueritas!

Alain, I have yet to see lapin at a Wisconsin market! Perhaps we will find some at the market in Cahors in the fall.

Tanna, I can no longer recall Sunday either! I eat out so much these days that soup making is a big thrill for me.

Cyn, I had a great burrito yesterday at a local restaurant, but it's been years since I've had one made at home! Sounds good!
