New! Greek Chicken with Bacon, Spinach, Feta and Olives

My husband's Greek Chicken is delicious.

A few months ago, my husband brought home some Greek Chicken from a local deli. We thought it was a delicious, once-in-a-while treat that we could make at home.

He was in charge of recreating the recipe. What he came up with was a keeper!


Greek Chicken with Bacon, Spinach, Feta and Olives
  • 3 chicken breast filets, with or without skin
  • 1/4 cup feta cheese, crumbled
  • 1/8 cup mozzarella, grated
  • 1/8 cup black olives, chopped into small pieces
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste
  • 1 cup of spinach leaves
  • 6 slices bacon strips

Preheat oven to 350 degrees.

First prepare the stuffing by mixing the crumbled feta and most of the grated mozzarella. Add olive chunks. Toss.

Butterfly the chicken breasts.  Stuff each breast with spinach and cheese-olive mixture. coat in olive oil and season. Wrap with two strips of bacon. Sprinkle leftover mozzarella on top. You may need to use toothpicks to keep the bacon in place. Bake for one hour.

My husband always manages to come up with food ideas that are easy - there's very little food prep involved here - but tasty. We ate this with Yukon Gold potatoes, roasted with thyme, and a tossed salad.


I can only handle half a breast at a time, so this meal was cost-effective.
